I cook some of my grandmothers recipets and she used a lot of flour and milk and vanilla and when I put the vanilla in it changes the color since vanilla is dark and using this it keeps it white but you have to watch outbecause with it being stronger you have to use less of it. I forgot and used the same amount and that was way to much, so buying this saves you money because you don't use as much and when your cooking with just milk and flour you will no longer lose the whiteness
